House Seasoning
1 cup Kosher Salt
1/4 cup Black Peper
1/4 cup Onion Powder

Meat-Vegetable Blend
3/4 tsp parsley flakes
1 tsp marjoram
3/4 tsp rosemary
1/2 tsp sage
~
Fish Blend
3/4 tsp parsley flakes
1/2 tsp onion powder
1/2 tsp sage
1/4 tsp marjoram
1/4 tsp paprika
~
Meat or Poultry
3/4 tsp marjoram
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp sage
1/2 tsp rosemary
~
Meat, Potatoes, Veggies
1 tsp dry mustard
1/2 tsp sage
1/2 tsp thyme
1/4 tsp marjoram
~
Barbeque Rub
3 cups of rub

2 cups sugar
1/4 cup paprika
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 cup salt
2 easpoons black pepper
1 teaspoon garlic powder

Combine all ingredients and use as a rub for any barbeque meats.

California Chili Powder

1/4 cup ground California or New Mexico chiles
1 tablespoon ground cumin
1 to 2 teaspoons cayenne
2 teaspoons dried oregano
2 teaspoons onion salt
1 teaspoon garlic powder

In a 1/3- to 1/2-cup tall narrow clear jar, layer the ingredients, contracting light layers with the dark layers.

Instructions to go with jar:
To use, shake jar or stir spices until blended.
Use to season cooked dried beans (home-cooked or canned), soups and stews, or rub onto meats, seafood or poultry to pan-fry, roast or barbecue

Chili & Rosemary Vinegar
1 cup dried red chili peppers, 1 to 2 inches long
4 cloves garlic, peeled
5 sprigs rosemary, fresh
3 cups distilled white vinegar

Place chilies, garlic and rosemary in clean 2 quart glass jar and crush them with a wooden spoon.
Heat vinegar until warm, then pour over herbs.
Set jar on sunny windowsill for 2 weeks, or until vinegar reaches desired strength.
Strain through sieve and pour into sterilized glass jars.
Add additional chili peppers and rosemary for decorative use to each jar if desired.
Seal and label.

Herb Flavored Vinegar
Eating a salad with herb flavored vinegar is absolutely delicious. It's very simple to make, but requires a little patience. Once you have combined all the ingredients, the oil must cure for two weeks.

Ingredients:
1 cup of fresh herbs: sage, thyme, and rosemary

1 mason jar
1 decorative bottle with a cork
16 ounces of either white or cider vinegar
3 peeled shallots

1. Place the herbs in a mortar and lightly crush with a pestle or place them on a cutting board and crush with the edge of a spatula.
2. Place ingredients in a mason jar.
3. Slightly heat 16 ounces of vinegar in a glass pot until warm.
4. Pour the vinegar over the herbs and tightly seal the jar.
5. Place the jar in a sunny window for two weeks.
6. Shake the jar daily and taste from time to time. If the vinegar needs a little more flavor, add some more herbs and let the jar sit a little longer.
7. Once the vinegar has reached the desired flavor, filter it through a straining cloth.
8. Pour the vinegar into a decorative bottle. Add fresh herbs for decoration and additional flavor.
9. Seal the bottle. Tie the neck of the decorative bottle with raffia for an added decorative display.

Creole Seasoning
1/3 cup salt
1/2 cup paprika
1/4 cup cayenne pepper
1/4 cup black pepper
1/4 cup garlic powder
3 tablespoons onion powder
2 tablespoons ground thyme


Mix up all ingredients in a bowl.
Store in plastic bags or glass jars

Herb-Rice Mix
1 cup instant rice
2 beef bouillon cubes or chicken bouillon cubes

1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1 teaspoon dried onion flakes


Place all ingredients in airtight plastic bag with these directions.
Mix with 2 cups cold water and 1 tablespoon butter in heavy saucepan.
Bring to a boil over high heat, stirring once with a fork.
Reduce heat, cover and simmer 12 to 14 minutes, or until all liquid is absorbed.

Mock Bay Seasoning
2 tablespoons bay leaf powder
2 tablespoons celery salt
1 tablespoon dry mustard
2 teaspoons ground black pepper
2 teaspoons ground ginger

2 teaspoons sweet paprika (smoked paprika is even better if you can find it!)
1 teaspoon white pepper
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground mace
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon


Combine all ingredients in an airtight jar, mix thoroughly.
Keep sealed until ready to use.
To give as a gift, place in a pretty jar, along with some recipes. This would look nice in a basket, maybe with some measuring spoons, and ingredients for one of the recipes you give. Enjoy!

Chile Pepper Oil

1 quart high-quality olive oil
Chile peppers

Soak peppers in oil at room temperature for one week.
Strain, then pour into a bottle or jar. Drop red chile peppers into bottle and tie raffia to the neck of the bottle.
Layer different shaped and colored pasta in a tall canister jar. Attach a wonderful
pasta recipe.

Apple Pie Spice
1 tablespoon ground cinnamon
1-1/2 teaspoon ground nutmeg
1 teaspoon ground allspice
1/4 teaspoon ground cloves

Store, tightly covered, in a cool dry place

Chili Powder
2 Tablespoons cumin

1 Tablespoon cayenne pepper
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon oregano

Makes about 1/3 cup.

Shake and Bake
4 cups dry bread crumbs
1/3 cup vegetable oil
1 tablespoon salt
1 tablespoon paprika
1 tablespoon celery salt
1 teaspoon ground black pepper
1/2 teaspoon garlic salt
1/2 teaspoon minced garlic
1/4 teaspoon minced onion
1 pinch dried basil leaves
1 pinch dried parsley
1 pinch dried oregano

In a large re-sealable plastic bag combine all ingredients. Seal bag and shake all ingredients together.

Spaghetti Seasoning
1 tablespoon dried onion
1 tablespoon parsley, freeze dried
1 tablespoon cornstarch
2 tablespoons bell peppers, freeze dried
1 1/2 teaspoon salt
1/4 teaspoon instant minced garlic
1 teaspoon sugar
3/4 teaspoon Italian seasoning or a combination of oregano, basil, rosemary, thyme, sage, marjoram

Combine all ingredients in a small bowl until evenly distributed. Spoon mixture onto a 6-inch square of aluminum foil and fold to make airtight. Label with date and contents. Store in a cool, dry place. Use within 6 months.

Taco Seasoning
3/4 cup dried minced onion
1/4 cup salt
1/4 cup chili powder
1 Tbsp. dried oregano
2 Tbsp. each cornstarch
1 Tbsp. crushed dried red pepper
1 Tbsp. dried minced garlic
1 Tbsp. ground cumin

Combine all ingredients in a small bowl until evenly distributed. Spoon 1/2 cup mixture onto a 6-inch square of aluminum foil and fold to make airtight. Label with date and contents. Store in a cool, dry place. Use within 6 months. Makes 12 packets

Ranch Dressing
This dressing is great because it doesn't have all the chemicals and preservatives that many do.

1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Mix all ingredients and store in an airtight jar.

Just before serving blend in 1 cup mayonnaise and1/2 cup sour cream with dressing mix. Mix and store overnight in fridge.

For Baked Potatoes stir into a small container of butter.

Vegetable Seasoning or Broth Mix
This delicious seasoning blend makes a terrific soup base. Also great on popcorn.

1/4 cup onion powder
1/4 cup dried parsley flakes
2 Tbsp Spike or seasoning salt
2 Tbsp garlic powder
2 Tbsp celery seed
2 tsp each sage
2 tsp marjoram
2 tsp thyme
2 tsp basil
2 tsp oregano
2 tsp pepper
2 tsp dill weed
1 tsp summer savory

Stir or shake before each use.

For vegetable broth substitute: use 1 rounded teaspoonful for each cup of water.

For seasoning: just sprinkle a bit on to vegetables while cooking. Also good in soups, stews, & casseroles.
